手抓羊肉源远流长,是生活在我国西北的蒙、藏、回、维等民族喜爱的传统食物。在漫长的岁月中,手抓羊肉原本只在西北少数民族聚居的高原和草原的帐篷间被牧民们食用,城市里极少见,名流视之为难登大雅之堂,不屑一顾。
手抓羊肉,相传有近千年的历史,原以手抓食用而得名。吃法有三种,即热吃(切片后上笼蒸热蘸三合油)、冷吃(切片后直接蘸精盐)、煎吃(用平底锅煎热,边煎边吃)。
这一盘羊肉,肉赤膘白,肥而不膻,色泽诱人,用刀割吃,虽然吃得嘴油的手滑,但仔细品味,爽而不腻,油润肉酥,质嫩滑软,滋味不凡。草原牧民煮手抓羊肉有独到之处。烹调操作简单明快,只加一小把盐(也有的不加盐,吃时蘸盐),火候恰如其分,血水消失不久,肉熟而不硬,吃起来又鲜又嫩,十分可口。草原上的手抓羊肉,色、香、味、形都代表了草原牧人的粗犷、豪放、热情、虔诚和好客的性格。
