做法:
首先用鲜嫩羊肉和尾部羊油切成拇指大小约3平方厘米见方的肉片,每一片有瘦有肥最好。然后将它们肥瘦搭配,一一平串在特制的铁钎上,每串约六七块肉。
一边用煤火烤,用扇子扇炉火,一边撒上精盐、辣椒粉、孜然粉等佐料,3~5分钟左右待一面呈酱红色,用同样的方法翻烤另一面,上下翻烤几分钟后两面刷上麻油即可食用。也可将串好的肉在用白面粉、鸡蛋、调料、盐配制的料糊里浸泡一会儿再烤,随烤随吃,香嫩可口,营养丰富。
酱油内加调料拌匀,随烤随将酱油刷在肉上。烤羊肉串用的铁钎子,长30厘米,一头装有木柄。过去,做串烤肉用的钎子都是用红柳的细条截削而成的木钎。这种原始的木钎不容易看到了。把肉穿好之后,便将它们疏密均匀地排放在燃着无烟煤的槽形铁皮烤肉炉上,铁槽分上下两层,中间隔板成孔状,用无烟煤作燃料。
